Pomegranate & Apple Kale Salad

It’s easy to get the salad-blahs during the cold winter months. Many of us start our health kick at the beginning of January, only to crash before the end of the month. My trick for keeping healthy foods exciting and fresh is to add colour. And lots of it!

In this gorgeous recipe, pomegranates take centre stage along with complementary gala apples. Their sweet and juicy flavours add plenty of taste to an otherwise simple baby kale and mixed green salad.

To take it up a notch, I’ve added a sprinkle of fresh basil and topped the salad with a sweet honey mustard dressing. The pairing is superb, if I do say so myself.

Rekindle your love for salads this month by adding colourful, delicious toppings like tangerines, coconut flakes, dried cranberries and pumpkin seeds.

Pomegranate & Apple Kale Salad 

Ingredients: 

  • 2 gala apples, sliced finely 
  • 6 cups baby kale and mixed greens 
  • Seeds from 1 pomegranate (approximately ¼ cup) 
  • 1-2 tablespoons fresh basil 
  • 4 tablespoons extra-virgin olive oil 
  • 2 tablespoons apple cider vinegar 
  • 1 tablespoon honey 
  • 2 teaspoons Dijon mustard 
  • Freshly ground pepper 
  • Salt 

Directions: 

In a small bowl, combine extra-virgin olive oil, apple cider vinegar, honey, Dijon mustard, salt and pepper to taste.

In a large serving bowl, toss the baby kale and mixed greens with the apples and vinaigrette. Top with the pomegranate seeds and fresh basil. Serve right away. Serves 6-8
