Bananas Foster Pancakes with Caramel Sauce

Makes 12 cm pancakes


  • 1 large egg 
  • 2 ¼ cups (550 mL) milk 
  • 3 tbsp (45 mL) butter, melted 
  • 2 cups (500 mL) all-purpose flour 
  • 1 tbsp (15 mL) granulated sugar 
  • 4 tsp (20 mL) baking powder 
  • ½ tsp (2 mL) kosher salt 
  • ¼ cup (60 mL) unsalted butter 
  • ½ cup (125 mL) packed dark brown sugar 
  • 1 tbsp (15 mL) dark rum 
  • 1 tsp (5 mL) vanilla extract 
  • 2 bananas, cut into ½-inch (1 cm) slices

Preheat oven to 200 degrees Fahrenheit (100 degrees Celsius). In a large bowl, lightly beat egg. Whisk in milk and melted butter. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add to egg mixture and whisk just until combined. In a medium skillet over medium heat, melt ¼ cup (60 mL) unsalted butter. Stir in brown sugar and cook, stirring occasionally, until sugar has completely dissolved, about 5 minutes. Stir in rum and vanilla. Add banana slices in a single layer and cook, turning once, until bananas are caramelized, about 1 minute per side. Keep warm until ready to serve. Grease a large non-stick skillet and set over medium heat. Ladle in ½ cup (125 mL) batter for each pancake and cook, turning once, until golden, about 2 minutes per side. Transfer pancakes to a baking sheet and keep warm in oven. Repeat with remaining batter. Spoon banana mixture over hot pancakes and serve immediately.
